Slow Cooker Chili
Ingredients
1 19 ounce can black beans drained and rinsed
1 15 ounce can dark red kidney beans drained and rinsed
I 19 ounce can garbanzo beans drained and rinsed
1 16 ounce can vegetarian baked beans
I large can chopped tomatoes and liquid
1 small can tomato puree
1 cup beer
1 onion chopped
3 large carrots diced
1 can chopped jalapeno peppers
1 large red and 1 large green pepper, seeded and chopped
4 stalks celery chopped
3 cloves of garlic chopped
2 tbls chili powder
1 tbls hot pepper sauce
1 tblsp cumin
About 8 leaves of fresh basil julienned
1 tsp coarse salt
Toppings on side:
Shredded Monterey Jack or Sharp Cheddar Cheese
Chopped scallions-green tops and white
Corn tortilla chips
Sour cream or yogurt
Chopped avocados
Directions
In a slow cooker, start by adding all chopped vegetables, then spices and stirring together, add remaining ingredients and cook for two hours or more on high.
Slow Cooker Bread Pudding
Ingredients
8 ½ cups cubed stale bread (can be cinnamon bread)
4 eggs
1 1/2 cups whole milk
1 cup heavy cream
¼ cup sugar
¼ cup melted butter
½ tsp pure vanilla extract
¼ tsp ground nutmeg
Optional -1 cup raisins or dried cranberries or chopped dried apricots ( if apricots, plump in tea for an hour first)
Directions
Grease the slow cooker, and in a mixing bowl combine the eggs, milk, butter, sugar, vanilla and nutmeg. Beat until smooth, then stir in fruit if you are using it. Cook on low, covered for about three hours or until bread recedes from sides of pot. Serve in bowls and on side have vanilla ice cream or whipped cream, chocolate chips, and chopped toasted walnuts.
